By October of her first year at UNC, Meredith Stricker was running Hunger Lunch, one of their most successful ventures. Every Wednesday, she coordinates 35 volunteers to serve a meal of rice, beans and cornbread in the center of campus. The meal, which sells for $3 a plate, earns $450 a week, all of which is invested in poverty eradication. Students like Meredith take the knowledge that they can do something about poverty with them for the rest of their lives.
